Blender Pancakes!

I am all about making things super simple, easy AND healthy in the kitchen.  So, I created these pancakes which are gluten, dairy and nut free….and delicious!

The best thing about these pancakes is that they are filled with protein, fat and fibre, oh my!  All the components needed for a healthy breakfast.  Although the chocolate chips aren’t necessarily needed they are definitely a great addition! 🙂

We are technically in spring, but Mother Nature has decided to add a little unpredictability to April!  I am typically always cold, so although smoothies are my go to breakfast, a warming start to my day is always welcome.

These pancakes definitely have a power pack punch!  Flax is a great source of Omega 3 fatty acids and studies show that the amounts of this good and essential fat is not compromised when baking, which makes it a staple in my kitchen.  I have also included chia, another source of fibre and high in magnesium, calcium, iron, protein and essential fats.

Blender Pancakes

Yields:  5-6 pancakes

Ingredients:

1/2 cup gluten free steel cut oats

1/4 cup ground flax

1 banana

1 tbsp cacao powder

1 tbsp chia

3/4 cup almond milk (or milk of your choice)

1 scoop of protein powder

1 tsp vanilla

1/2 tsp baking soda

pinch of salt

1/2 cup semi sweet dairy free chocolate chips

Directions:

Add vanilla, milk and banana to blender and blend until smooth.

Add remaining ingredients EXCEPT the chocolate chips.  Blend until smooth. NOTE:  It will be thick

Pour batter into a glass bowl and fold in chocolate chips.

Heat pan to medium.  Add 1 tbsp of coconut oil or ghee.

Add 3 scoops (1/2 cup ish each) of batter to the pan and cook until golden brown on both sides.

Enjoy with berries and maple syrup or raw honey!
