-40 eh? Cold is not my thing….I will take +20 degree temperatures any day! However, let’s face it, we live in Canada and we have been very lucky not to have deal with this type of weather that often….well in this area.
So, as I add yet another layer of clothing and contemplate what to eat for lunch, I am torn. I love all the goodness of salads like spinach, arugula, cilantro, and dandelion greens, and all the enzymes, vitamins and minerals they provide, but during winter (and especially on days like today), it is not what my body is wanting…too cold!
I had made a batch of cleansing vegetable soup a couple days ago, so why not combine the worlds of soups and salads!
I heated up my soup, served it into a bowl and mixed in my salad! The goodness of mineral rich broth with the aliveness of fibre and enzyme rich salad. Priceless.
Some people just don’t enjoy a salad on its own, but sometimes it just needs a little variation to spark your taste buds. I absolutely love this vegetable soup recipe, so make a batch, give it a try and let me know what you think:
4 cups of water
4 zucchini chopped
3 celery stalks chopped
1 cup green beans chopped
1 bunch of parsley or cilantro
3 tomatoes chopped
2 tsp of sea salt
2 tsp of oregano, rosemary or thyme (or a combination)
• Bring all ingredients to a boil and simmer for 3o minutes. If you would like a creamy texture, you can blend the soup.
