My new favourite meal!

Hungry and searching through the fridge and pantry to make something nutritious, delicious and most of all QUICK, I came up with a new recipe!

I thought I would start with eggs, but what was I going to add to it, to make the dish come alive?  So, I diced up some avocado, added one of my favourite spices – turmeric, and sprinkled some sea salt on top.  I scrambled all these ingredients, then added sauerkraut and rolled it into a wrap.  Total time to my mouth?  Less than 15 minutes!  The flavours were awesome!  The sauerkraut really balanced out the other flavours.  I know you may be wondering “were you really THAT hungry that you would eat THIS?”, but honestly, you need to give this a try!

This dish is definitely layered with goodness.


The avocado gives us loads of fibre and good fats.


Turmeric lowers inflammation, protects our cardiovascular system and supports the detoxification process in our liver.


Sauerkraut is one of my favourite fermented foods providing us with enzymes and good probiotics.


Sea salt gives us so many trace minerals and aids in digestion.


2 eggs, beaten

1/2 avocado, diced

1/2 tsp turmeric (more if you like!)

1/4-1/2 tsp sea salt

2-4 tbsp sauerkraut (the kind made with salt NOT vinegar)

your favourite wrap


Scrambled all ingredients (except sauerkraut) together in a low-medium heat pan.

Remove scrambled eggs from pan, add sauerkraut and wrap it all up.
