Well, today was a snow day and with 3 active kids, I needed to make sure the day is full so as to not get the question, “I am bored, what should I do?” So, one of our activities was baking! It is always a challenge to try and make wholesome treats that are full of good food AND that my kids think are delicious. With all this in mind, I decided on quinoa cookies! Quinoa is a fantastic gluten free grain, and a complete protein I might add. It is also a good source of magnesium, manganese, vitamin B2, vitamin E, iron, phosphorus, copper, zinc and fibre. A great little treasure! These cookies turned out great and I am excited to share them….so here you go….ENJOY!
1 cup cooked quinoa
1 cup quinoa flour
1/2 cup unsweetened coconut
2 bananas, mashed
1/2 cup almond butter
1/2 cup coconut sugar
1/2 cup dark chocolate chips (at least 70% cacao)
1 tsp pure vanilla extract
Heat oven to 375 degrees.
To make cooked quinoa for this recipe: rinse and drain 1/2 cup of quinoa and add to a pot with 1/2 cup of almond milk and 1/2 cup of water. Bring to a boil, reduce heat, cover and simmer for 15 minutes until liquid has been absorbed. Remove from heat and let sit for 5 minutes.
Mix bananas, almond butter, vanilla and sugar.
Add cooked quinoa, flour, and coconut.
Fold in chocolate chips.
Line a baking sheet with parchment paper and drop tablespoons full of batter onto cookie sheet.
Bake for 20 minutes.
