There is something so energizing about the freshness of the air, the glory of the colours and the warmth of the sun freely given to us as a beautiful gift for us to unwrap throughout the day and enjoy.
I love the magic of fall and incorporating the plentiful harvest to create warming dishes such as soups and stews ….. and of course homemade baked apples!
As we are all busy with life, I am always looking for ways to find nutritious recipes that don’t take a heap load of time. So, I came up with a recipe that uses your crock pot to save you time and to fill your home with the delicious aroma of apples and cinnamon.
This recipe is a slight twist on baked apples as I have included cranberries, oranges and ginger (great for digestion and anti-inflammatory). The end result worked out really well! So much so, that my family finished a crock pot of baked apples in 24 hours!

1 tsp ground cinnamon
1 tsp ground ginger
1 tsp freshly grated nutmeg
1/2 tsp ground cloves
Zest of 1 orange
1/4 cup of freshly squeezed orange juice
1/2 cup of maple syrup
1 cup of fresh cranberries
12 apples, peeled, cored and thinly sliced
Put everything in a crock pot and mix.
Cook on low for 6-8 hours or on high for 2-3 hours.
